Ingredients:

  • 400 g Lubeca Marzipan Classic Supreme LMCS (with rose extract) item 011
  • 50 g Water
  • 250 g Sugar
  • 150 g Egg yolk (pasteurised)
  • 250 g Egg (pasteurised)
  • 1000 g unsweetened whipped cream
  • Fresh raspberries and raspberry sauce

Method

Mix the LMCS Lubeca Marzipan Classic Supreme item 011 and water into a smooth paste. Heat eggs,
egg yolk and sugar in a Bain Marie, add the Marzipan-mix and cool while stirring. Fold in the whipped cream.

Pour the parfait into chilled mold, and cover with a thin layer of almond sponge. Freeze it. Serve on a plate garnished with fresh raspberries and/or raspberry sauce.
