A delicious tart featuring a buttery Breton shortbread crust, filled with a vanilla apple mix and topped with vibrant goji berries for a sweet and tangy twist.

Breton shortbread
Ingredients:
Sugar 350 g
Butter 450 g
Eggs 50 g
Water 40 g
Lemon zest 5 g
Salt 5 g
Baking powder 15 g
Flour 700 g
Method:
Mix first sugar, egg and butter shortly.
Add baking powder and flour, mix into a homogeneous dough.
Give the dough a rest in the fridge.
Make the dough more flexible by adding a drop of water.
Vanilla apple mix with goji berries
Ingredients:
ALDIA APPLE CUBES 1000 g
Goji berries 50 g
Vanilla powder 5 g
Method:
Mix all the raw materials into a homogenous mixture.
Cake
Ingredients:
Cake mix 1000 g
Butter 400 g
Eggs 400 g
Water 50 g
Method:
Soften the butter.
Mix all the ingredients for +/- 3 min. in 2nd gear (depending on the machine). Specific weight 850 g/l.
Bake the cake.
Structure:
Take small baking rings or baking molds of your choice and grease them with CARLEX. Use the rings to cut out to Breton shortbread but leave the dough in the rings.
Put a layer of the vanilla apple mix on top.
Bake for about 25 minutes (depending on the mold) at 180 °C. Cut the baked cake in cubes and cover the apple tarts with Aldia Miroir Neutral.
Decorate the tarts with cubes of cake, dots of LEMON CREAM and icing sugar.
Finish just before serving with some goji berries.
